FRUITY BRAN YOGURT



Pick any berry...a small banana, medium-sized peach, half a cup of fresh blueberries... anything you like best. Toss it into a blender with 1 cup skim or non fat milk, 1/2 cup of plain non fat yogurt, with regards to a teaspoon of vanilla extract, a teaspoon or two of sugar and 1/4 cup of your favorite bran flakes. I love to add about 1/2 cup of ice. Blend until smooth and pour into an Tall glass or goblet. Sprinkle with cinnamon and wow! Exactly what a great and quick starter.

QUICK FRENCH TOAST



It's not necessary to quit pancakes or french toast if you have diabetes. Just be several substitutions plus a great diabetic breakfast recipe is soon on your table.



With this one whisk 2 eggs, 1/4 cup of orange juice and a dash of salt in a bowl. Into a separate flat pan you will need either 1/2 cup of crushed bran or corn flakes, or some crushed pecans. Or mix both together for added taste. Melt 2 or 3 tbsp of margarine in a fry pan. Dip slices of wheat grains bread to the egg mix then to your crushed dry mix and line the frying pan. Cook until brown on sides. Serve with fresh peaches or blueberries as a topping. Who says cooking for diabetics needs to be boring?
